- 1 lb ground chicken
- 1 tbsp olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp onion powder
- Salt and pepper, to taste
- 2 tbsp tomato paste
- 1/4 cup chicken broth or water
- 8 corn or flour tortillas
- Toppings: shredded lettuce, diced tomatoes, shredded cheese, diced avocado, sour cream, lime wedges, chopped cilantro
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and cook until softened, about 3-4 minutes.
- Stir in minced garlic and cook for another minute.
- Add ground chicken and cook, breaking it up with a spoon, until browned and cooked through.
- Sprinkle in chili powder, cumin, paprika, onion powder, salt, and pepper. Stir well to coat the chicken evenly.
- Add tomato paste and chicken broth (or water) to keep the mixture moist. Simmer for 2-3 minutes until the flavors meld.
- Warm tortillas in a dry skillet or microwave until pliable.
- Spoon the ground chicken mixture onto tortillas. Top with shredded lettuce, tomatoes, cheese, avocado, sour cream, and a squeeze of fresh lime juice. Garnish with cilantro.
Notes
- Swap ground chicken for turkey or lean ground beef if you prefer.
- Add black beans or corn to the filling for extra texture.
- For more heat, add diced jalapeños or a splash of your favorite hot sauce.
- Use lettuce wraps instead of tortillas for a low-carb option.
