- 1 lb ground beef
- 1 small head green cabbage, chopped (about 6 cups)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup beef broth or water
- 1 tablespoon soy sauce (optional for umami)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chopped onion and cook until softened, about 3 minutes.
- Add ground beef to the skillet. Cook, breaking it up with a spoon, until browned and fully cooked, about 6–8 minutes. Drain excess grease if needed.
- Add garlic, salt, pepper, paprika, oregano, and red pepper flakes. Stir and cook for 1 minute.
- Add chopped cabbage and beef broth (and soy sauce if using). Stir to combine, then cover and cook for 8–10 minutes, stirring occasionally, until cabbage is tender.
- Remove lid and cook for another 2–3 minutes to let any excess liquid evaporate. Adjust seasoning to taste.
- Serve hot, garnished with fresh herbs if desired.
Notes
- Use lean ground beef (85% or higher) to reduce grease.
- This dish is great as-is or served over rice, mashed potatoes, or cauliflower rice.
- Add shredded carrots or bell peppers for extra veggies and color.
