- 8 small corn or flour tortillas
- 1/2 cup diced onion
- 1/2 cup chopped fresh cilantro
- 1 avocado, sliced
- 1/2 cup fresh salsa or pico de gallo
- 1/4 cup crumbled queso fresco (optional)
Instructions
- In a bowl, mix olive oil, lime juice, garlic, chili powder, cumin, paprika, salt, and pepper.
- Rub the marinade over the steak and refrigerate for at least 30 minutes, up to 4 hours.
- Preheat grill to medium-high heat. Grill steak for 4-5 minutes per side or until desired doneness.
- Let steak rest for 5 minutes, then slice thinly against the grain.
- Warm tortillas on the grill or stovetop.
- Assemble tacos with steak slices, onion, cilantro, avocado, salsa, and cheese.
- Serve immediately with lime wedges if desired.

- Flank and skirt steak work best due to their tenderness when grilled and sliced thin.
