Description

A vibrant Mediterranean-inspired grilled shrimp dish with fresh herbs, garlic, and cherry tomatoes—perfect for summer meals and backyard cookouts.


Ingredients

  • 1 lb large raw shrimp, peeled and deveined
  • 1 pint cherry tomatoes
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh basil, chopped
  • 1 tsp dried oregano (or 1 tbsp fresh)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes.
  2. In a large bowl, whisk together olive oil, lemon juice, minced garlic, parsley, basil, oregano, salt, and pepper.
  3. Add shrimp and cherry tomatoes to the bowl and toss to coat. Marinate in the fridge for 20–30 minutes.
  4. Preheat grill to medium-high heat.
  5. Thread shrimp and cherry tomatoes alternately onto the skewers.
  6. Grill the skewers for 2–3 minutes per side, or until shrimp are opaque and lightly charred.
  7. Remove from grill and let rest a few minutes before serving. Garnish with extra herbs and a squeeze of lemon juice if desired.

Notes

  • Add vegetables like zucchini, bell peppers, or red onion to the skewers for added color and nutrition.
  • For a spicy variation, mix in chili flakes or smoked paprika.
  • Serve over couscous, rice, or salad for a complete meal.
