- 1 lb large raw shrimp, peeled and deveined
- 1 pint cherry tomatoes
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 2 tbsp lemon juice
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh basil, chopped
- 1 tsp dried oregano (or 1 tbsp fresh)
- 1/2 tsp salt
- 1/4 tsp black pepper
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes.
- In a large bowl, whisk together olive oil, lemon juice, minced garlic, parsley, basil, oregano, salt, and pepper.
- Add shrimp and cherry tomatoes to the bowl and toss to coat. Marinate in the fridge for 20–30 minutes.
- Preheat grill to medium-high heat.
- Thread shrimp and cherry tomatoes alternately onto the skewers.
- Grill the skewers for 2–3 minutes per side, or until shrimp are opaque and lightly charred.
- Remove from grill and let rest a few minutes before serving. Garnish with extra herbs and a squeeze of lemon juice if desired.
Notes
- Add vegetables like zucchini, bell peppers, or red onion to the skewers for added color and nutrition.
- For a spicy variation, mix in chili flakes or smoked paprika.
- Serve over couscous, rice, or salad for a complete meal.
