Description

A light and refreshing salad with sweet grilled peaches, creamy burrata cheese, and a tangy balsamic glaze, perfect for a summer meal or side dish.


Ingredients

  • 4 ripe peaches, halved and pitted
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 8 ounces burrata cheese
  • Mixed greens (arugula, spinach, or your choice), 4 cups
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon pine nuts (optional)

Instructions

  1. Preheat grill or grill pan to medium heat.
  2. Brush peach halves with olive oil and season with salt and pepper.
  3. Grill peaches for 3-4 minutes per side, or until slightly charred and softened.
  4. In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer and cook for 5-7 minutes until the sauce thickens.
  5. On a large plate, arrange the mixed greens. Top with grilled peaches, tearing the burrata into pieces and placing it around the salad.
  6. Drizzle the balsamic glaze over the salad, and garnish with fresh basil and pine nuts if desired.

Notes

  • For a vegan option, substitute burrata with vegan cheese or omit it entirely.
  • Grilled peaches can also be substituted with grilled nectarines or plums.
  • For extra crunch, add some toasted almonds or walnuts.
