A light and refreshing salad with sweet grilled peaches, creamy burrata cheese, and a tangy balsamic glaze, perfect for a summer meal or side dish.

- 4 ripe peaches, halved and pitted
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 8 ounces burrata cheese
- Mixed greens (arugula, spinach, or your choice), 4 cups
- 1/4 cup balsamic vinegar
- 1 tablespoon honey
- 1 tablespoon fresh basil, chopped
- 1 tablespoon pine nuts (optional)
Instructions
- Preheat grill or grill pan to medium heat.
- Brush peach halves with olive oil and season with salt and pepper.
- Grill peaches for 3-4 minutes per side, or until slightly charred and softened.
- In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer and cook for 5-7 minutes until the sauce thickens.
- On a large plate, arrange the mixed greens. Top with grilled peaches, tearing the burrata into pieces and placing it around the salad.
- Drizzle the balsamic glaze over the salad, and garnish with fresh basil and pine nuts if desired.
Notes
- For a vegan option, substitute burrata with vegan cheese or omit it entirely.
- Grilled peaches can also be substituted with grilled nectarines or plums.
- For extra crunch, add some toasted almonds or walnuts.
