Description

Grilled Corn in Foil with Lemon Dill Butter is a delicious and easy summer side dish. Sweet corn is wrapped in foil and grilled to perfection, then slathered with a zesty lemon dill butter.


Ingredients

  • 4 ears of corn, husked
  • 4 tablespoons unsalted butter, softened
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • Aluminum foil, for wrapping

Instructions

  1. Preheat grill to medium-high heat.
  2. In a small bowl, mix the softened butter, dill, lemon zest, lemon juice, salt, and pepper until well combined.
  3. Place each ear of corn on a piece of aluminum foil.
  4. Spread a generous amount of lemon dill butter over each ear of corn.
  5. Wrap the corn tightly in the foil to seal.
  6. Place foil-wrapped corn on the grill and cook for 15-20 minutes, turning occasionally, until the corn is tender.
  7. Carefully unwrap and serve hot with extra lemon dill butter, if desired.

Notes

  • You can prepare the lemon dill butter ahead of time and refrigerate it.
  • For a smoky flavor, grill the corn for a few minutes unwrapped after cooking.
  • Fresh herbs like parsley or chives can be used in place of dill.
