Description

Grilled Chicken Kafta is a flavorful Middle Eastern dish made with ground chicken, fresh herbs, and warm spices, shaped onto skewers and grilled to juicy perfection. It’s a healthy and delicious option for any cookout or family meal.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup finely chopped onion
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • Wooden or metal skewers

Instructions

  1. In a large bowl, combine all ingredients and mix well until thoroughly blended.
  2. Divide the mixture into 6-8 portions and shape each around a skewer into a long, thin log.
  3. Preheat grill to medium-high heat and oil the grates to prevent sticking.
  4. Grill kafta skewers for 10-12 minutes, turning occasionally, until golden brown and fully cooked (internal temp 165°F/74°C).
  5. Serve hot with pita bread, hummus, or a fresh salad.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • You can substitute ground turkey or beef if preferred.
  • Mix can be made ahead and refrigerated for up to 24 hours before grilling.
