Description

Grilled Chicken & Broccoli Bowls with Creamy Garlic Sauce are a wholesome and flavorful meal featuring juicy grilled chicken, tender broccoli, and rice, all drizzled with a rich, garlicky sauce.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 cups broccoli florets
  • 1 tablespoon water (for steaming broccoli)
  • 2 cups cooked white or brown rice
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 3/4 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt (for sauce)
  • 1/4 teaspoon black pepper (for sauce)

Instructions

  1. Preheat a grill pan or outdoor grill to medium-high heat.
  2. Season chicken breasts with olive oil, salt, pepper, and paprika.
  3. Grill chicken for 5–7 minutes per side or until fully cooked. Let rest, then slice.
  4. Meanwhile, steam broccoli with 1 tablespoon of water in a covered pan for 4–5 minutes until tender-crisp.
  5. For the sauce, melt butter in a small saucepan over medium heat. Add garlic and sauté for 1 minute.
  6. Whisk in flour and cook for 1 minute to form a roux.
  7. Gradually whisk in milk, stirring until smooth and thickened, about 3–4 minutes.
  8. Stir in Parmesan cheese, salt, and pepper. Remove from heat.
  9. Assemble bowls by dividing rice, grilled chicken, and broccoli evenly.
  10. Drizzle with creamy garlic sauce and serve warm.

Notes

  • Use rotisserie chicken to save time on prep.
  • Cauliflower can be used in place of broccoli for variety.
  • Double the sauce if you prefer extra creaminess.
