- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 2 cups broccoli florets
- 1 tablespoon water (for steaming broccoli)
- 2 cups cooked white or brown rice
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1 tablespoon all-purpose flour
- 3/4 cup milk
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon salt (for sauce)
- 1/4 teaspoon black pepper (for sauce)
Instructions
- Preheat a grill pan or outdoor grill to medium-high heat.
- Season chicken breasts with olive oil, salt, pepper, and paprika.
- Grill chicken for 5–7 minutes per side or until fully cooked. Let rest, then slice.
- Meanwhile, steam broccoli with 1 tablespoon of water in a covered pan for 4–5 minutes until tender-crisp.
- For the sauce, melt butter in a small saucepan over medium heat. Add garlic and sauté for 1 minute.
- Whisk in flour and cook for 1 minute to form a roux.
- Gradually whisk in milk, stirring until smooth and thickened, about 3–4 minutes.
- Stir in Parmesan cheese, salt, and pepper. Remove from heat.
- Assemble bowls by dividing rice, grilled chicken, and broccoli evenly.
- Drizzle with creamy garlic sauce and serve warm.
Notes
- Use rotisserie chicken to save time on prep.
- Cauliflower can be used in place of broccoli for variety.
- Double the sauce if you prefer extra creaminess.
