- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 ripe California avocados, sliced
- 2 medium tomatoes, diced
- 1 cup shredded mozzarella cheese
- 2 tablespoons chopped fresh basil
- 2 tablespoons balsamic glaze
Instructions
- Preheat the grill to medium-high heat.
- Brush chicken breasts with olive oil and season with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Grill the chicken for 5-7 minutes per side or until fully cooked and internal temperature reaches 165°F (74°C).
- During the last 2 minutes of grilling, sprinkle mozzarella cheese on each chicken breast and allow it to melt.
- Remove chicken from the grill and top each piece with sliced avocado and diced tomatoes.
- Drizzle with balsamic glaze and sprinkle with chopped fresh basil.
- Serve immediately while warm.
Notes
- Use a meat thermometer to ensure chicken is fully cooked.
- Substitute mozzarella with provolone or Monterey Jack for a different flavor.
- Fresh basil adds brightness, but parsley can be used as an alternative.
