Description

A flavorful and healthy grilled chicken dish topped with creamy California avocado, fresh tomatoes, melted mozzarella, and a balsamic glaze.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 ripe California avocados, sliced
  • 2 medium tomatoes, diced
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons balsamic glaze

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush chicken breasts with olive oil and season with garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Grill the chicken for 5-7 minutes per side or until fully cooked and internal temperature reaches 165°F (74°C).
  4. During the last 2 minutes of grilling, sprinkle mozzarella cheese on each chicken breast and allow it to melt.
  5. Remove chicken from the grill and top each piece with sliced avocado and diced tomatoes.
  6. Drizzle with balsamic glaze and sprinkle with chopped fresh basil.
  7. Serve immediately while warm.

Notes

  • Use a meat thermometer to ensure chicken is fully cooked.
  • Substitute mozzarella with provolone or Monterey Jack for a different flavor.
  • Fresh basil adds brightness, but parsley can be used as an alternative.
