Description

This Grilled Bruschetta Chicken is a fresh and flavorful dish that’s perfect for warm weather. Juicy grilled chicken breasts are topped with a vibrant tomato and basil bruschetta mixture and a sprinkle of melted mozzarella. It’s a healthy, low-carb meal that’s ready in under 30 minutes!


Ingredients

For the chicken:

  • 4 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon garlic powder

  • Salt and pepper, to taste

For the bruschetta topping:

  • 2 cups cherry tomatoes, diced

  • 2 tablespoons red onion, finely chopped

  • 2 tablespoons fresh basil, chopped

  • 1 tablespoon balsamic vinegar

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

Optional:

  • 1 cup shredded mozzarella or sliced fresh mozzarella

  • Extra fresh basil for garnish

  • Additional balsamic glaze for drizzling


Instructions

  1. Preheat your grill to medium-high heat.

  2. Brush chicken breasts with olive oil and season with Italian seasoning, garlic powder, salt, and pepper.

  3. Grill the chicken for 6–7 minutes per side or until cooked through and internal temperature reaches 165°F (74°C).

  4. While the chicken grills, prepare the bruschetta topping. In a bowl, combine diced tomatoes, red onion, basil, balsamic vinegar, olive oil, salt, and pepper. Mix well.

  5. Once the chicken is almost done, top each breast with a handful of shredded mozzarella and close the grill lid for 1–2 minutes to melt the cheese.

  6. Remove chicken from the grill and top with the fresh bruschetta mixture.

  7. Garnish with more fresh basil and a drizzle of balsamic glaze, if desired. Serve immediately.


Notes

  • You can swap out mozzarella for feta or goat cheese for a different twist.

  • This recipe is also great served over a bed of arugula or pasta.

  • For extra flavor, marinate the chicken in olive oil, garlic, and balsamic vinegar for 30 minutes before grilling.
