Description

This Greek Yogurt Chicken Salad is a light, creamy, and protein-packed twist on the classic! It’s made with tender shredded chicken, crunchy celery, juicy grapes, and a tangy Greek yogurt dressing. Perfect for meal prep, sandwiches, or a fresh lettuce wrap.


Ingredients

 

  • 2 cups cooked chicken breast, shredded or chopped

  • 1/2 cup plain Greek yogurt

  • 1 tablespoon mayonnaise (optional for creaminess)

  • 1 teaspoon Dijon mustard

  • 1/2 cup celery, diced

  • 1/2 cup red grapes, halved

  • 1/4 cup red onion, finely chopped

  • 2 tablespoons chopped fresh parsley

  • 1 tablespoon lemon juice

  • Salt and pepper to taste

  • Optional: chopped nuts (like almonds or walnuts) for crunch


Instructions

  • In a large bowl, combine the Greek yogurt, mayonnaise (if using), Dijon mustard, and lemon juice. Mix well.

  • Add in the shredded chicken, celery, grapes, red onion, and parsley. Stir until everything is evenly coated.

  • Season with salt and pepper to taste.

  • Chill in the fridge for at least 30 minutes before serving to let the flavors blend.

 

  • Serve on bread, in a wrap, over salad greens, or in lettuce cups.


Notes

  • You can use rotisserie chicken for a quick option.

  • Add nuts for extra crunch or swap grapes for chopped apples.

  • For a dairy-free version, use a non-dairy yogurt alternative.
