Description

Greek Salad Pinwheels are a refreshing and flavorful appetizer made with classic Mediterranean ingredients wrapped in soft tortillas. Perfect for parties or healthy snacking.


Ingredients

  • 4 large flour tortillas
  • 1 cup hummus
  • 1 cup chopped cucumber
  • 1 cup diced tomatoes (seeds removed)
  • 1/2 cup sliced Kalamata olives
  • 1/4 cup finely chopped red onion
  • 1 cup crumbled feta cheese
  • 1 cup chopped romaine lettuce
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Lay out the flour tortillas on a flat surface.
  2. Spread a thin layer of hummus evenly over each tortilla.
  3. Sprinkle chopped cucumber, tomatoes, olives, red onion, feta cheese, and romaine lettuce evenly over the hummus layer.
  4. Season with oregano, salt, and pepper.
  5. Roll each tortilla tightly into a log shape.
  6. Wrap the rolled tortillas in plastic wrap and refrigerate for at least 30 minutes to firm up.
  7. Slice each roll into 1-inch pinwheels and serve.
