Description

Greek Pasta Salad is a refreshing and colorful dish made with pasta, fresh vegetables, olives, and feta cheese, all tossed in a tangy Greek dressing. It’s perfect for potlucks, picnics, or as a light meal.


Ingredients

  • 12 oz (340g) rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup Kalamata olives, pitted and halved
  • 1 cup feta cheese, crumbled
  • 1/4 cup red bell pepper, diced (optional)
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 garlic clove, minced
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and rinse under cold water to stop cooking. Set aside.
  2. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, oregano, garlic, salt, and pepper to make the dressing.
  3. In a large mixing bowl, combine cooked pasta, cherry tomatoes, cucumber, red onion, olives, red bell pepper (if using), and feta cheese.
  4. Pour dressing over the salad and toss until everything is evenly coated.
  5. Chill in the refrigerator for at least 30 minutes before serving for best flavor.

Notes

  • You can substitute other pasta shapes like bowties or shells.
  • Add grilled chicken for extra protein and make it a full meal.
  • Best served cold or at room temperature.
