- 3 medium carrots, sliced
- 2 celery stalks, sliced
- 8 cups chicken broth
- 2 cups shredded cooked chicken
- 2 cups egg noodles
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, and celery. Sauté for 5–6 minutes until softened.
- Pour in chicken broth and bring to a boil.
- Add thyme, bay leaf, and shredded chicken. Reduce heat and simmer for 10 minutes.
- Stir in egg noodles and cook for 8–10 minutes until noodles are tender.
- Season with salt and pepper to taste.
- Remove bay leaf and stir in fresh parsley before serving.
