Description

A comforting and flavorful classic, Chicken Noodle Soup is a nourishing dish made with tender chicken, hearty vegetables, and egg noodles simmered in a savory broth.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 2 cups shredded cooked chicken
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery. Sauté for 5–6 minutes until softened.
  3. Pour in chicken broth and bring to a boil.
  4. Add thyme, bay leaf, and shredded chicken. Reduce heat and simmer for 10 minutes.
  5. Stir in egg noodles and cook for 8–10 minutes until noodles are tender.
  6. Season with salt and pepper to taste.
  7. Remove bay leaf and stir in fresh parsley before serving.

Notes

  • You can use rotisserie chicken for convenience.
  • Add a squeeze of lemon juice for brightness.
  • For a gluten-free version, use gluten-free noodles.
