Description

A refreshing and hearty Greek-inspired pasta salad featuring juicy chicken, tangy feta cheese, fresh vegetables, and a zesty dressing. Perfect for picnics, meal prep, or a light dinner.


Ingredients

  • 2 cups cooked pasta (penne or rotini)
  • 2 cups cooked chicken breast, shredded or chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 3/4 cup feta cheese, crumbled
  • 1/4 cup chopped fresh parsley
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked pasta, chicken, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine evenly.
  5. Refrigerate for at least 30 minutes before serving for best flavor.
  6. Serve chilled or at room temperature.

Notes

  • You can use rotisserie chicken for a quicker preparation.
  • Add bell peppers or artichoke hearts for extra flavor.
  • Use whole wheat or gluten-free pasta if preferred.
