Juicy grilled Greek-style chicken skewers paired with crispy oven-baked fries tossed in crumbled feta and fresh herbs. This dish is full of Mediterranean flavor, easy to make, and perfect for summer cookouts or a weeknight dinner.
Ingredients
For the Chicken Skewers:

1.5 lbs boneless, skinless chicken thighs (or breasts), cut into 1.5-inch pieces

3 tbsp olive oil

3 tbsp plain Greek yogurt

3 tbsp lemon juice

1 tbsp red wine vinegar

4 cloves garlic, minced

2 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

Wooden or metal skewers
For the Feta Fries:

2 lbs russet potatoes, peeled and cut into fries

2 tbsp olive oil

1 tsp garlic powder

1/2 tsp paprika

Salt and pepper, to taste

1/2 cup crumbled feta cheese

2 tbsp chopped fresh parsley

1 tbsp chopped fresh dill (optional)
Instructions

Marinate the Chicken:
In a bowl, mix olive oil, yogurt, lemon juice, vinegar, garlic, oregano, salt, and pepper. Add chicken pieces and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 4 hours). -
Prepare the Fries:
Preheat oven to 425°F (220°C). Toss potato fries with olive oil, garlic powder, paprika, salt, and pepper. Spread evenly on a baking sheet. Bake for 30–35 minutes, flipping halfway, until golden and crispy. -
Assemble and Cook the Skewers:
Thread marinated chicken onto skewers. Grill over medium-high heat for 10–12 minutes, turning occasionally, until fully cooked and slightly charred. -
Finish the Fries:
Once fries are done, sprinkle with crumbled feta, parsley, and dill while still hot. -
Serve:
Plate the skewers with a side of feta fries and serve with lemon wedges and tzatziki sauce, if desired.
