Description

Juicy grilled Greek-style chicken skewers paired with crispy oven-baked fries tossed in crumbled feta and fresh herbs. This dish is full of Mediterranean flavor, easy to make, and perfect for summer cookouts or a weeknight dinner.


Ingredients

For the Chicken Skewers:

  • 1.5 lbs boneless, skinless chicken thighs (or breasts), cut into 1.5-inch pieces

  • 3 tbsp olive oil

  • 3 tbsp plain Greek yogurt

  • 3 tbsp lemon juice

  • 1 tbsp red wine vinegar

  • 4 cloves garlic, minced

  • 2 tsp dried oregano

  • 1 tsp salt

  • 1/2 tsp black pepper

  • Wooden or metal skewers

For the Feta Fries:

 

  • 2 lbs russet potatoes, peeled and cut into fries

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1/2 tsp paprika

  • Salt and pepper, to taste

  • 1/2 cup crumbled feta cheese

  • 2 tbsp chopped fresh parsley

  • 1 tbsp chopped fresh dill (optional)


Instructions

  1. Marinate the Chicken:
    In a bowl, mix olive oil, yogurt, lemon juice, vinegar, garlic, oregano, salt, and pepper. Add chicken pieces and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 4 hours).

  2. Prepare the Fries:
    Preheat oven to 425°F (220°C). Toss potato fries with olive oil, garlic powder, paprika, salt, and pepper. Spread evenly on a baking sheet. Bake for 30–35 minutes, flipping halfway, until golden and crispy.

  3. Assemble and Cook the Skewers:
    Thread marinated chicken onto skewers. Grill over medium-high heat for 10–12 minutes, turning occasionally, until fully cooked and slightly charred.

  4. Finish the Fries:
    Once fries are done, sprinkle with crumbled feta, parsley, and dill while still hot.

  5. Serve:
    Plate the skewers with a side of feta fries and serve with lemon wedges and tzatziki sauce, if desired.


Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.

  • For extra crispy fries, soak the cut potatoes in cold water for 30 minutes, then dry thoroughly before baking.
