Description

These Greek Chicken Gyros are bursting with flavor thanks to juicy marinated chicken, creamy homemade tzatziki, and crisp veggies all wrapped in warm pita bread. It’s an easy, healthy meal that tastes like it came straight from a street vendor in Athens!


Ingredients

  • 1 1/2 lbs boneless, skinless chicken thighs or breasts

  • 3 tablespoons olive oil

  • Juice of 1 lemon

  • 3 garlic cloves, minced

  • 2 teaspoons dried oregano

  • 1 teaspoon paprika

  • 1 teaspoon ground cumin

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

For the tzatziki sauce:

  • 1 cup Greek yogurt

  • 1/2 cucumber, grated and squeezed dry

  • 1 tablespoon olive oil

  • 1 tablespoon lemon juice

  • 1 clove garlic, minced

  • 1 tablespoon chopped fresh dill (or 1 tsp dried)

  • Salt and pepper to taste

To assemble:

 

  • 4-6 pita breads or flatbreads

  • 1 cup shredded lettuce

  • 1 cup diced tomatoes

  • 1/2 small red onion, thinly sliced

  • Feta cheese, crumbled (optional)

  • Extra lemon wedges


Instructions

  • Marinate the chicken:
    In a large bowl or zip-top bag, combine all marinade ingredients. Add the chicken and toss to coat. Cover and refrigerate for at least 1 hour, preferably 3–4 hours.

  • Make the tzatziki:
    In a bowl, mix together all tzatziki ingredients. Taste and adjust seasoning. Chill until ready to use (can be made a day ahead).

  • Cook the chicken:
    Heat a grill pan or skillet over medium-high heat. Cook marinated chicken for 5–6 minutes per side, or until cooked through and nicely charred. Let rest for 5 minutes, then slice.

  • Warm the pita:
    Heat pitas in a dry skillet or wrap in foil and warm in the oven.

 

  • Assemble the gyros:
    Spread a generous spoonful of tzatziki on each pita. Top with sliced chicken, lettuce, tomatoes, onion, and feta if using. Add a squeeze of lemon juice and serve warm.


Notes

  • Use store-bought tzatziki to save time.

  • You can also grill the chicken for added smoky flavor.

 

  • Make it vegetarian by swapping the chicken for grilled halloumi or chickpea patties.
