Description

Juicy chicken breasts stuffed with creamy goat cheese and herbs, then baked to perfection for a rich and satisfying main course.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 oz goat cheese
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh thyme
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Toothpicks for securing

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix goat cheese, parsley, thyme, and garlic until well combined.
  3. Cut a pocket into each chicken breast by slicing horizontally, being careful not to cut all the way through.
  4. Stuff each pocket with the goat cheese mixture and secure with toothpicks.
  5. Season both sides of the chicken breasts with salt and pepper.
  6. Heat olive oil in a skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden brown.
  7. Transfer seared chicken to a baking dish and bake for 20-25 minutes or until cooked through and juices run clear.
  8. Remove toothpicks before serving. Serve hot.

Notes

  • You can add spinach or sun-dried tomatoes to the stuffing for extra flavor.
  • Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).
  • Pairs well with roasted vegetables or a fresh salad.
