- 4 boneless, skinless chicken breasts
- 4 oz goat cheese
- 2 tbsp chopped fresh parsley
- 1 tbsp chopped fresh thyme
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- Toothpicks for securing
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix goat cheese, parsley, thyme, and garlic until well combined.
- Cut a pocket into each chicken breast by slicing horizontally, being careful not to cut all the way through.
- Stuff each pocket with the goat cheese mixture and secure with toothpicks.
- Season both sides of the chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden brown.
- Transfer seared chicken to a baking dish and bake for 20-25 minutes or until cooked through and juices run clear.
- Remove toothpicks before serving. Serve hot.

- You can add spinach or sun-dried tomatoes to the stuffing for extra flavor.
- Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).
