Description

These Glazed Blueberry Butter Swim Biscuits are tender, buttery, and bursting with juicy blueberries, finished with a sweet vanilla glaze. Perfect for breakfast, brunch, or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 3/4 cups cold buttermilk
  • 1/2 cup melted unsalted butter
  • 1 cup fresh or frozen blueberries
  • 1 cup confectioners’ sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Pour in the cold buttermilk and gently mix until just combined—do not overmix.
  4. Fold in the blueberries carefully to avoid crushing them.
  5. Pour the melted butter into an 8×8 inch baking dish.
  6. Transfer the dough into the buttered dish and gently press it out to fill the pan.
  7. Use a sharp knife to score the dough into 9 squares for even baking.
  8. Bake for 25-28 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  9. While biscuits are baking, whisk together the confectioners’ sugar, milk, and vanilla extract to make the glaze.
  10. Drizzle the glaze over the warm biscuits right after removing from the oven.
