Ingredients
Scale
- 2 cups all-purpose flour
- 1 tbsp sugar
- 1 tbsp baking powder
- 1 tsp salt
- 1 3/4 cups cold buttermilk
- 1/2 cup melted unsalted butter
- 1 cup fresh or frozen blueberries
- 1 cup confectioners’ sugar
- 2 tbsp milk
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 450°F (230°C).
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Pour in the cold buttermilk and gently mix until just combined—do not overmix.
- Fold in the blueberries carefully to avoid crushing them.
- Pour the melted butter into an 8×8 inch baking dish.
- Transfer the dough into the buttered dish and gently press it out to fill the pan.
- Use a sharp knife to score the dough into 9 squares for even baking.
- Bake for 25-28 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- While biscuits are baking, whisk together the confectioners’ sugar, milk, and vanilla extract to make the glaze.
- Drizzle the glaze over the warm biscuits right after removing from the oven.
Notes
- Swap blueberries for raspberries or chopped strawberries for variety.
- Add lemon zest to the glaze for a citrusy finish.
- Use almond extract instead of vanilla for a nutty flavor.
- Sprinkle coarse sugar on top before baking for extra crunch.
