  • 2 tablespoons fresh rosemary, chopped

  • 1/2 teaspoon black pepper
  • 1 teaspoon Dijon mustard (optional)
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. In a bowl, whisk together olive oil, minced garlic, chopped rosemary, lemon juice, salt, and pepper. Add Dijon mustard or red pepper flakes if using.
  2. Place lamb chops in a large resealable bag or shallow dish and pour the marinade over them.
  3. Seal or cover and refrigerate for at least 1 hour, preferably overnight.
  4. Preheat the grill to medium-high heat.
  5. Remove lamb chops from marinade and let the excess drip off.
  6. Grill for 3–4 minutes per side for medium-rare, or longer for desired doneness.
  7. Let rest for 5 minutes before serving.
