Ingredients
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, diced
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
- 8 ounces penne pasta
- 1 cup grated Parmesan cheese
- 1 tablespoon chopped parsley (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced chicken and cook until browned and cooked through, about 5-6 minutes. Remove chicken and set aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Add chicken broth, heavy cream, salt, pepper, and Italian seasoning. Stir to combine.
- Add uncooked penne pasta to the skillet. Bring to a boil, then reduce heat to a simmer. Cover and cook for 12-15 minutes, stirring occasionally, until pasta is tender.
- Stir in cooked chicken and Parmesan cheese. Mix until the cheese is melted and the sauce is creamy.
- Garnish with chopped parsley if desired. Serve warm.

- You can use rotisserie chicken for a quicker option.
- Add spinach or broccoli for extra vegetables.
