- 1 medium head cauliflower, cut into small florets (about 4 cups)
- 2 tablespoons olive oil
- 3 tablespoons butter
- 4 cloves garlic, minced
- 8 oz mushrooms, sliced (white or cremini)
- 1/2 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons chopped parsley (optional garnish)
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add cauliflower florets and cook for 5–7 minutes, stirring occasionally, until lightly browned and starting to soften.
- Push cauliflower to one side of the skillet. Add butter and garlic to the other side and cook for 1 minute until fragrant.
- Add mushrooms and thyme to the skillet. Stir everything together and cook for another 6–8 minutes, or until mushrooms are browned and cauliflower is tender.
- Season with salt and pepper to taste. Add Parmesan cheese if using, and stir to combine.
- Garnish with chopped parsley and serve hot.
Notes
- Use a mix of mushrooms for added depth of flavor.
- Add a splash of vegetable or chicken broth if the skillet gets too dry while cooking.
