Description

Garlic Mushrooms Cauliflower Skillet is a quick and flavorful low-carb side or main dish made with sautéed mushrooms, tender cauliflower, and savory garlic butter. It’s a one-pan recipe that pairs perfectly with any protein or stands on its own.


Ingredients

  • 1 medium head cauliflower, cut into small florets (about 4 cups)
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 8 oz mushrooms, sliced (white or cremini)
  • 1/2 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons chopped parsley (optional garnish)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add cauliflower florets and cook for 5–7 minutes, stirring occasionally, until lightly browned and starting to soften.
  2. Push cauliflower to one side of the skillet. Add butter and garlic to the other side and cook for 1 minute until fragrant.
  3. Add mushrooms and thyme to the skillet. Stir everything together and cook for another 6–8 minutes, or until mushrooms are browned and cauliflower is tender.
  4. Season with salt and pepper to taste. Add Parmesan cheese if using, and stir to combine.
  5. Garnish with chopped parsley and serve hot.

Notes

  • Use a mix of mushrooms for added depth of flavor.
  • Add a splash of vegetable or chicken broth if the skillet gets too dry while cooking.
