Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 lb Brussels sprouts, trimmed and halved
  • 3 tbsp olive oil, divided
  • 3 cloves garlic, minced
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, whisk together garlic, Dijon mustard, honey, lemon juice, 2 tbsp olive oil, salt, pepper, and paprika.
  3. In a large bowl, toss Brussels sprouts with 1 tbsp olive oil and a pinch of salt and pepper. Spread on a baking sheet.
  4. Rub the chicken thighs with the garlic Dijon mixture and place them on the baking sheet with the Brussels sprouts.
  5. Bake for 25-30 minutes, or until the chicken is cooked through and Brussels sprouts are tender and golden.
  6. Serve warm, spooning extra pan juices over the top if desired.

  • For extra crispiness, broil the dish for 2-3 minutes at the end.
