Description

Garlic Chicken Gnocchi Skillet is a quick and hearty one-pan meal packed with juicy chicken, soft gnocchi, and a creamy garlic sauce, ready in just 30 minutes.


Ingredients

  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 16 oz potato gnocchi
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1/4 cup chopped parsley (optional for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken, season with salt, pepper, and Italian seasoning, and cook until golden and cooked through. Remove and set aside.
  2. In the same skillet, melt butter and sauté garlic for 1 minute until fragrant.
  3. Add gnocchi and cook for 2-3 minutes until lightly golden.
  4. Pour in chicken broth and heavy cream. Stir and bring to a simmer.
  5. Return cooked chicken to the skillet. Simmer for 5-7 minutes until gnocchi is tender and the sauce thickens.
  6. Stir in Parmesan cheese and spinach. Cook for 1-2 minutes until spinach is wilted.
  7. Garnish with chopped parsley if desired. Serve hot.

Notes

  • Use pre-cooked gnocchi for faster prep.
  • Add red pepper flakes for a spicy kick.
  • Substitute spinach with kale or arugula if desired.
