Ingredients
- 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 tbsp butter
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 16 oz potato gnocchi
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1/4 cup chopped parsley (optional for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chicken, season with salt, pepper, and Italian seasoning, and cook until golden and cooked through. Remove and set aside.
- In the same skillet, melt butter and sauté garlic for 1 minute until fragrant.
- Add gnocchi and cook for 2-3 minutes until lightly golden.
- Pour in chicken broth and heavy cream. Stir and bring to a simmer.
- Return cooked chicken to the skillet. Simmer for 5-7 minutes until gnocchi is tender and the sauce thickens.
- Stir in Parmesan cheese and spinach. Cook for 1-2 minutes until spinach is wilted.
- Garnish with chopped parsley if desired. Serve hot.

- Use pre-cooked gnocchi for faster prep.
- Add red pepper flakes for a spicy kick.
- Substitute spinach with kale or arugula if desired.
