Description

This garlic butter steak and potatoes skillet is the perfect one-pan meal that’s loaded with flavor. Juicy, tender steak bites are seared to perfection and tossed with golden, crispy potatoes in a rich garlic butter sauce. Quick enough for a weeknight dinner, but tasty enough to impress guests!


Ingredients

  • 1 lb sirloin steak, cut into bite-sized cubes

  • 1 lb baby potatoes, halved

  • 4 tablespoons unsalted butter

  • 3 garlic cloves, minced

  • 1 tablespoon olive oil

  • 1 teaspoon fresh thyme (or 1/2 tsp dried)

  • 1 teaspoon fresh rosemary (or 1/2 tsp dried)

  • Salt, to taste

  • Black pepper, to taste

 

  • Fresh parsley, chopped (for garnish)


Instructions

  • Prep the potatoes: In a large skillet over medium heat, heat olive oil. Add the halved baby potatoes cut side down. Cook for 10–12 minutes, flipping occasionally, until golden and fork-tender. Remove and set aside.

  • Sear the steak: Season steak bites with salt and pepper. In the same skillet, melt 2 tablespoons of butter over medium-high heat. Add steak pieces in a single layer and sear for about 2–3 minutes per side, or until browned and cooked to your desired doneness. Remove from the skillet and set aside.

  • Make the garlic butter: Lower the heat to medium. Add remaining 2 tablespoons butter to the skillet. Stir in garlic, thyme, and rosemary. Cook for about 1 minute until fragrant.

  • Combine: Return potatoes and steak to the skillet and toss to coat everything in the garlic herb butter.

 

  • Garnish and serve: Sprinkle with fresh chopped parsley and serve immediately.


Notes

  • You can swap sirloin for ribeye or NY strip for a richer flavor.

  • Add a pinch of red pepper flakes if you like a little heat.

 

  • For extra crispiness, roast the potatoes in the oven before adding to the skillet.
