Description

This Garlic Butter Asparagus Orzo is a quick and easy side dish that’s full of flavor. Creamy, garlicky, and loaded with tender asparagus, it’s a perfect pairing for chicken, fish, or enjoyed on its own as a light meal.


Ingredients

  • 1 cup orzo pasta

  • 1 tablespoon olive oil

  • 2 tablespoons unsalted butter

  • 3 cloves garlic, minced

  • 1 bunch asparagus, trimmed and chopped into 1-inch pieces

  • 2 cups low-sodium vegetable broth or chicken broth

  • 1/2 teaspoon salt (adjust to taste)

  • 1/4 teaspoon black pepper

  • 1/4 cup grated Parmesan cheese

  • Zest of 1/2 lemon (optional, for brightness)

  • 1 tablespoon fresh parsley, chopped (optional for garnish)


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add orzo and toast it for 2–3 minutes, stirring often, until golden.

  2. Add butter and minced garlic. Sauté for 1 minute until fragrant.

  3. Stir in chopped asparagus and cook for another 2 minutes.

  4. Pour in broth, salt, and pepper. Stir to combine.

  5. Bring to a simmer, then reduce heat to low. Cover and cook for 10–12 minutes, stirring occasionally, until orzo is tender and most of the liquid is absorbed.

  6. Remove from heat. Stir in Parmesan cheese and lemon zest (if using).

  7. Garnish with fresh parsley and serve warm.


Notes

  • For a creamier version, stir in a splash of heavy cream or a tablespoon of cream cheese at the end.

  • You can swap asparagus for broccoli or peas depending on what’s in season.

  • Add cooked chicken or shrimp for a protein boost.
