Fresno Poppers are a spicy and cheesy appetizer made by stuffing Fresno chili peppers with a creamy cheese filling, then baking or grilling them to perfection.

- 10 Fresno chili peppers
- 8 oz cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 10 slices of bacon (optional, for wrapping)
- Cooking spray or oil (for baking or grilling)
Instructions
- Preheat oven to 375°F (190°C) or heat grill to medium-high.
- Cut a slit down the side of each Fresno pepper and remove seeds and membranes.
- In a bowl, mix cream cheese, shredded cheddar, green onions, garlic powder, salt, and black pepper.
- Stuff each pepper with the cheese mixture.
- Optional: Wrap each stuffed pepper with a slice of bacon and secure with toothpicks.
- Place peppers on a baking sheet or grill.
- Bake for 20-25 minutes or grill for 10-15 minutes, turning occasionally, until bacon is crisp and peppers are tender.
- Let cool slightly before serving.
Notes
- Use gloves when handling chili peppers to avoid irritation.
- Substitute Fresno peppers with jalapeños for a different heat level.
- Can be prepared ahead and refrigerated before baking or grilling.
