Description

A vibrant, tangy green salsa made with tomatillos, chiles, fresh herbs, and lime juice, perfect for dipping or topping your favorite Mexican dishes.


Ingredients

  • 1 lb tomatillos, husked and rinsed
  • 23 jalapeños or serrano chiles
  • 1/2 white onion, chopped
  • 2 garlic cloves, peeled
  • 1/2 cup fresh cilantro
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tsp salt (or to taste)

Instructions

  1. Husk and rinse the tomatillos to remove their sticky coating.
  2. In a saucepan, boil the tomatillos and chiles in water for about 5-7 minutes until softened and slightly pale.
  3. Drain and transfer the tomatillos and chiles to a blender or food processor.
  4. Add the chopped onion, peeled garlic, fresh cilantro, lime juice, olive oil, and salt.
  5. Blend until smooth or to your desired consistency.
  6. Taste and adjust seasoning if necessary.
  7. Let the salsa cool to room temperature before serving, or refrigerate until ready to use.

Notes

  • Roast the tomatillos and chiles for a smoky flavor.
  • Add avocado for a creamy variation.
  • For a milder salsa, use green bell pepper instead of chiles.
