Ingredients

- 1 lb tomatillos, husked and rinsed
- 2–3 jalapeños or serrano chiles
- 1/2 white onion, chopped
- 2 garlic cloves, peeled
- 1/2 cup fresh cilantro
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1 tsp salt (or to taste)
Instructions
- Husk and rinse the tomatillos to remove their sticky coating.
- In a saucepan, boil the tomatillos and chiles in water for about 5-7 minutes until softened and slightly pale.
- Drain and transfer the tomatillos and chiles to a blender or food processor.
- Add the chopped onion, peeled garlic, fresh cilantro, lime juice, olive oil, and salt.
- Blend until smooth or to your desired consistency.
- Taste and adjust seasoning if necessary.
- Let the salsa cool to room temperature before serving, or refrigerate until ready to use.
Notes
- Roast the tomatillos and chiles for a smoky flavor.
- Add avocado for a creamy variation.
- For a milder salsa, use green bell pepper instead of chiles.
- Stir in finely diced onion after blending for extra texture.
