Description

A classic French Onion Soup made with caramelized onions, rich beef broth, and topped with a crusty baguette and melted Gruyère cheese.


Ingredients

  • 4 large yellow onions, thinly sliced
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 6 cups beef broth
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 baguette, sliced
  • 2 cups grated Gruyère cheese

Instructions

  1. In a large pot, melt butter with olive oil over medium heat. Add sliced onions, sugar, and salt.
  2. Cook onions, stirring frequently, until caramelized and golden brown, about 30-40 minutes.
  3. Add garlic and cook for another minute. Stir in white wine to deglaze the pan and simmer until reduced by half.
  4. Add beef broth, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer uncovered for 30 minutes. Season with salt and pepper to taste.
  5. While soup simmers, preheat the oven to 400°F (200°C). Arrange baguette slices on a baking sheet and toast until golden.
  6. Ladle soup into oven-safe bowls, top with a slice of toasted baguette and a generous handful of Gruyère cheese.
  7. Place bowls under broiler until cheese is melted and bubbly, about 2-3 minutes. Serve hot.

Notes

  • Use sweet onions for extra flavor.
  • Vegetable broth can be used for a vegetarian version.
  • For a deeper flavor, add a splash of brandy before simmering the soup.
