Description

A comforting twist on classic meatloaf with caramelized onions, savory herbs, and melted cheese—topped with a rich French onion glaze.


Ingredients

  • 1 tbsp olive oil
  • 2 large yellow onions, thinly sliced
  • 1 tsp sugar
  • 2 cloves garlic, minced
  • lb ground beef
  • ½ lb ground pork (optional)
  • 1 cup breadcrumbs
  • 2 large eggs
  • ½ cup milk
  • 2 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp fresh thyme or ½ tsp dried thyme
  • Salt and pepper, to taste
  • 1 cup shredded Gruyère or Swiss cheese (optional)
  • 1 cup French onion soup (canned or homemade)
  • 2 tbsp ketchup


Instructions

  1. Preheat oven to 350°F (175°C) and prepare a baking sheet or loaf pan.
  2. Heat olive oil in a skillet and sauté onions with sugar until caramelized, about 25 minutes. Add garlic and cook for 1 minute more. Let cool slightly.
  3. In a large bowl, combine ground beef, pork (if using), caramelized onions, breadcrumbs, eggs, milk, Worcestershire sauce, Dijon, thyme, salt, and pepper. Mix gently.
  4. Shape into a loaf on a baking sheet or press into a loaf pan.
  5. Mix French onion soup with ketchup and brush half over the loaf.
  6. Bake for 45 minutes. Brush with remaining glaze, add cheese (if using), and bake for another 10–15 minutes or until internal temperature reaches 160°F (71°C).
  7. Let rest for 10 minutes before slicing and serving.

Notes

  • Use ground turkey or chicken for a leaner version.
  • Prepare ahead and refrigerate before baking.
  • Store leftovers in an airtight container and reheat in oven or microwave.
  • Serve with mashed potatoes or green beans for a complete meal.
