A comforting twist on classic meatloaf with caramelized onions, savory herbs, and melted cheese—topped with a rich French onion glaze.
Ingredients
- 1 tbsp olive oil
- 2 large yellow onions, thinly sliced
- 1 tsp sugar
- 2 cloves garlic, minced
- 1½ lb ground beef
- ½ lb ground pork (optional)
- 1 cup breadcrumbs
- 2 large eggs
- ½ cup milk
- 2 tsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1 tsp fresh thyme or ½ tsp dried thyme
- Salt and pepper, to taste
- 1 cup shredded Gruyère or Swiss cheese (optional)
- 1 cup French onion soup (canned or homemade)
- 2 tbsp ketchup
Instructions
- Preheat oven to 350°F (175°C) and prepare a baking sheet or loaf pan.
- Heat olive oil in a skillet and sauté onions with sugar until caramelized, about 25 minutes. Add garlic and cook for 1 minute more. Let cool slightly.
- In a large bowl, combine ground beef, pork (if using), caramelized onions, breadcrumbs, eggs, milk, Worcestershire sauce, Dijon, thyme, salt, and pepper. Mix gently.
- Shape into a loaf on a baking sheet or press into a loaf pan.
- Mix French onion soup with ketchup and brush half over the loaf.
- Bake for 45 minutes. Brush with remaining glaze, add cheese (if using), and bake for another 10–15 minutes or until internal temperature reaches 160°F (71°C).
- Let rest for 10 minutes before slicing and serving.
Notes
- Use ground turkey or chicken for a leaner version.
- Prepare ahead and refrigerate before baking.
- Store leftovers in an airtight container and reheat in oven or microwave.
- Serve with mashed potatoes or green beans for a complete meal.
