- 1 lb ground beef
- 1 tablespoon olive oil
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon thyme
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup sour cream
- 1/2 cup beef broth
- 2 cups cooked egg noodles
- 1 1/2 cups shredded mozzarella or Swiss cheese
- 1 cup French fried onions
- 1/4 cup chopped parsley (optional garnish)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large skillet, heat olive oil over medium heat. Add sliced onions and cook until golden and caramelized, about 15 minutes. Add garlic and cook 1 minute more. Remove from pan and set aside.
- In the same skillet, brown the ground beef. Season with salt, pepper, and thyme. Drain any excess grease.
- Stir in the caramelized onions, cream of mushroom soup, sour cream, and beef broth. Mix until combined.
- Fold in the cooked egg noodles and half of the shredded cheese.
- Transfer the mixture to the prepared baking dish. Top with remaining cheese and bake uncovered for 20 minutes.
- Sprinkle French fried onions on top and bake for another 5–10 minutes, or until golden and bubbly.
- Garnish with chopped parsley before serving, if desired.

- Use Swiss cheese for a more traditional French onion flavor, or mozzarella for a milder option.
- Make ahead and refrigerate before baking for a convenient meal prep option.
