Ingredients

Scale

Main Ingredients:

  • 3 cups cooked and cooled jasmine or long-grain rice
  • 2 tablespoons vegetable oil

Egg Mixture:

  • 3 eggs (lightly beaten)

Vegetable Mix:

  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup frozen peas and carrots (thawed)
  • 1/2 cup green onions (sliced)

Sauce and Seasonings:

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Optional sriracha or chili flakes for heat

Instructions

  1. Prepare Egg Mixture: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the beaten eggs and scramble until just set. Transfer to a plate.
  2. Sauté Vegetables: Add remaining oil to the pan. Sauté onion until softened. Add garlic and cook until fragrant. Stir in peas and carrots, cook for 2 minutes.
  3. Stir-fry Rice: Add rice, breaking up clumps, and stir-fry until heated through. Add soy sauce, oyster sauce, and sesame oil.
  4. Combine and Serve: Return eggs to the pan, add green onions. Mix well and stir-fry for a minute. Adjust seasoning and serve hot.
