These fluffy homemade biscuits are soft, buttery, and incredibly easy to make from scratch. Perfect for breakfast or as a side with dinner, they come together quickly with simple ingredients you probably already have in your kitchen.
Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1 tablespoon sugar (optional, for a slightly sweet biscuit)

1/2 cup (1 stick) cold unsalted butter, cut into small cubes

3/4 cup cold buttermilk (plus more for brushing)
Instructions

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.

Add cold butter cubes and cut them into the dry ingredients using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Pour in the cold buttermilk and gently stir until the dough just comes together. Don’t overmix.

Turn the dough out onto a floured surface. Gently pat or roll it into a 1-inch thick rectangle. Fold the dough over itself 2–3 times to create layers, then pat it out again to 1-inch thick.

Use a round biscuit cutter to cut out biscuits. Place them close together on the prepared baking sheet.

Brush the tops with a little buttermilk for a golden finish.

Bake for 12–15 minutes, or until the tops are golden brown.

Let cool slightly before serving warm with butter, honey, or jam.

Make sure your butter and buttermilk are cold for the fluffiest biscuits.

You can freeze the unbaked biscuits and bake straight from frozen—just add a couple of extra minutes to the bake time.
