Description

  • 8 small flour tortillas

Instructions

  1. Preheat a large skillet or grill pan over medium-high heat.
  2. In a large bowl, toss the sliced vegetables with olive oil, cumin, smoked paprika, chili powder, garlic powder, salt, and pepper.
  3. Cook the vegetables in the skillet for about 8-10 minutes, stirring occasionally, until they are tender and slightly charred.
  4. Warm the tortillas in a dry pan or microwave.
  5. Fill each tortilla with a generous amount of the cooked vegetables.
