- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled cotija cheese (or feta)
- 1 teaspoon chili powder
- 1 tablespoon fresh lime juice
- 2 tablespoons chopped cilantro (optional)
- Lime wedges, for serving
Instructions
- Preheat grill to medium-high heat. Grill corn directly on the grates, turning occasionally, until lightly charred and cooked through, about 8–10 minutes.
- In a small bowl, mix mayonnaise, sour cream, and lime juice until well combined.
- Brush the creamy mixture evenly over the grilled corn.
- Sprinkle with cotija cheese, chili powder, and chopped cilantro (if using).
- Serve immediately with lime wedges on the side.
Notes
- You can also boil or roast the corn if a grill isn’t available.
- Use Tajín seasoning for a tangy-spicy variation.
- For a spicier version, add cayenne pepper or hot sauce.
