Description

Elote, or Mexican Street Corn, is a popular and flavorful snack made with grilled corn on the cob slathered in creamy mayo, chili, lime, and cheese—perfect for summer gatherings or a tasty side dish.


Ingredients

  • 4 ears of corn, husked
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese (or feta)
  • 1 teaspoon chili powder
  • 1 tablespoon fresh lime juice
  • 2 tablespoons chopped cilantro (optional)
  • Lime wedges, for serving

Instructions

  1. Preheat grill to medium-high heat. Grill corn directly on the grates, turning occasionally, until lightly charred and cooked through, about 8–10 minutes.
  2. In a small bowl, mix mayonnaise, sour cream, and lime juice until well combined.
  3. Brush the creamy mixture evenly over the grilled corn.
  4. Sprinkle with cotija cheese, chili powder, and chopped cilantro (if using).
  5. Serve immediately with lime wedges on the side.

Notes

  • You can also boil or roast the corn if a grill isn’t available.
  • Use Tajín seasoning for a tangy-spicy variation.
  • For a spicier version, add cayenne pepper or hot sauce.
