Description

A simple and delicious recipe for classic whoopie pies, featuring soft chocolate cakes sandwiched with creamy filling.


Ingredients

  • 1/2 cup cocoa powder
  • 1 1/4 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1/2 cup marshmallow fluff
  • 1/4 cup unsalted butter, softened (for filling)
  • 1 cup powdered sugar (for filling)
  • 1/2 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, beat the butter and brown sugar until fluffy. Add the egg and vanilla extract and mix well.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until combined.
  5. Drop tablespoonfuls of batter onto the prepared baking sheets, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes or until the cakes spring back when lightly pressed. Let them cool completely.
  7. For the filling, beat the butter and marshmallow fluff together until smooth. Add powdered sugar and vanilla extract and beat until fluffy.
  8. Spread the filling on the flat side of half the cakes and top with the remaining cakes to form sandwiches.
