Description

This easy taco soup is a hearty, flavorful one-pot meal made with ground beef, beans, corn, and taco seasonings. Perfect for a quick weeknight dinner or meal prep.

  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 2 cups beef broth
  • 1 packet taco seasoning
  • 1/2 tsp salt (optional)
  • 1/4 tsp black pepper
  • Optional toppings: shredded cheese, sour cream, tortilla chips, avocado, cilantro

Instructions

  1. In a large pot or Dutch oven over medium heat, cook ground beef until browned. Drain excess fat.
  2. Add chopped onion and garlic, cooking for 2–3 minutes until softened.
  3. Stir in black beans, kidney beans, corn, diced tomatoes, tomato sauce, beef broth, taco seasoning, salt, and pepper.
  4. Bring to a boil, then reduce heat and let simmer for 20–25 minutes to blend flavors.
  5. Serve hot with your favorite toppings like cheese, sour cream, or tortilla chips.
