- 1 lb ground beef
- 1 packet taco seasoning mix
- 1/4 cup water
- 6 cups chopped romaine lettuce
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded cheddar cheese
- 1/2 cup canned black beans, drained and rinsed
- 1/2 cup corn (fresh, canned, or frozen and thawed)
- 1/4 cup sliced black olives (optional)
- 1/4 cup chopped red onion
- 1 avocado, diced
- 1 cup crushed tortilla chips
- 1/2 cup salsa or taco dressing
- Sour cream and lime wedges for serving (optional)
Instructions
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add taco seasoning and water to the skillet. Stir and simmer for 5 minutes. Remove from heat and let cool slightly.
- In a large bowl, combine lettuce, tomatoes, beans, corn, olives, red onion, and avocado.
- Add the cooked ground beef and shredded cheese to the salad mixture.
- Drizzle with salsa or taco dressing and toss gently to combine.
- Top with crushed tortilla chips just before serving.
- Garnish with sour cream and lime wedges if desired.
