- 2/3 cup whole milk

- 1 pound fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar (for strawberries)
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract (for whipped cream)
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the cold butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.
- Add the milk and vanilla extract, mixing just until combined. Do not overmix.
- Turn the dough out onto a floured surface and gently pat it to about 1-inch thickness. Cut out 6 shortcakes using a round biscuit cutter.
- Place the biscuits on the prepared baking sheet and bake for 12-15 minutes or until golden brown. Let them cool on a wire rack.
- Meanwhile, combine the sliced strawberries with 1/4 cup sugar and let them macerate for at least 15 minutes.
- In a chilled bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- To assemble, slice the biscuits in half horizontally, spoon strawberries over the bottom half, top with whipped cream, then place the top half of the biscuit on top.
- Serve immediately and enjoy!
