Description
This easy strawberry cake is bursting with fresh strawberry flavor, made with simple ingredients and topped with a sweet strawberry glaze or frosting. Perfect for spring and summer occasions.
Ingredients
- 1 box white cake mix
- 1 (3 oz) package strawberry gelatin
- 1/2 cup milk
- 1/2 cup vegetable oil
- 4 large eggs
- 1 cup mashed fresh strawberries
- 1/2 tsp vanilla extract
- For the frosting (optional):
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1/4 cup finely chopped strawberries (or strawberry puree)
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or one 9×13-inch pan.
- In a large bowl, combine cake mix and strawberry gelatin. Add milk, oil, eggs, mashed strawberries, and vanilla. Beat with an electric mixer on medium speed for 2–3 minutes, until smooth.
- Pour the batter into prepared pans and bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool cakes in pans for 10 minutes, then transfer to a wire rack to cool completely.
- To make the frosting, beat butter until creamy. Gradually add powdered sugar, chopped strawberries, and vanilla. Mix until fluffy and spreadable.
- Frost the cooled cake and refrigerate until ready to serve.
Notes
- Use fresh, ripe strawberries for the best flavor.
- If strawberries are very juicy, strain excess liquid before adding to frosting.
- Store frosted cake in the refrigerator for up to 3 days.
