Description

This easy strawberry cake is bursting with fresh strawberry flavor, made with simple ingredients and topped with a sweet strawberry glaze or frosting. Perfect for spring and summer occasions.


Ingredients

  • 1 box white cake mix
  • 1 (3 oz) package strawberry gelatin
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 cup mashed fresh strawberries
  • 1/2 tsp vanilla extract
  • For the frosting (optional):
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup finely chopped strawberries (or strawberry puree)
  • 1/2 tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or one 9×13-inch pan.
  2. In a large bowl, combine cake mix and strawberry gelatin. Add milk, oil, eggs, mashed strawberries, and vanilla. Beat with an electric mixer on medium speed for 2–3 minutes, until smooth.
  3. Pour the batter into prepared pans and bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  4. Cool cakes in pans for 10 minutes, then transfer to a wire rack to cool completely.
  5. To make the frosting, beat butter until creamy. Gradually add powdered sugar, chopped strawberries, and vanilla. Mix until fluffy and spreadable.
  6. Frost the cooled cake and refrigerate until ready to serve.

Notes

  • Use fresh, ripe strawberries for the best flavor.
  • If strawberries are very juicy, strain excess liquid before adding to frosting.
  • Store frosted cake in the refrigerator for up to 3 days.
