Description

This easy strawberry basil galette is a rustic and delicious dessert featuring fresh strawberries and fragrant basil wrapped in a buttery, flaky crust. Perfect for a simple summer treat.


Ingredients

  • 1 1/2 cups fresh strawberries, hulled and sliced
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon lemon juice
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 pre-made pie crust or homemade tart dough
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (optional, for topping)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine sliced strawberries, chopped basil, lemon juice, granulated sugar, and cornstarch. Mix gently until well coated.
  3. Roll out the pie crust on the prepared baking sheet.
  4. Spoon the strawberry mixture into the center of the crust, leaving a 2-inch border around the edges.
  5. Fold the edges of the crust up over the strawberries, pleating as needed to form a rustic shape.
  6. Brush the crust with the beaten egg and sprinkle coarse sugar over the edges if desired.
  7. Bake for 35–40 minutes or until the crust is golden brown and the filling is bubbly.
  8. Let the galette cool slightly before slicing and serving.

Notes

  • Use ripe but firm strawberries to prevent a soggy filling.
  • Chill the dough if it gets too soft while assembling.
  • Serve with vanilla ice cream or whipped cream for extra indulgence.
