- 1.5 lbs boneless, skinless chicken breasts, sliced into thin strips
- 3 bell peppers (red, yellow, green), sliced
- 1 large red onion, sliced
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Juice of 1 lime
- 8 small flour or corn tortillas
- Optional toppings: sour cream, guacamole, salsa, shredded cheese, cilantro
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, mix olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.
- Add chicken strips, bell peppers, and onions to the bowl and toss to coat evenly with the seasoning mixture.
- Spread the chicken and vegetables in an even layer on a large sheet pan.
- Bake for 20-25 minutes, stirring halfway through, until the chicken is cooked through and vegetables are tender.
- Remove from oven and squeeze lime juice over the fajitas.
- Serve hot with tortillas and your choice of toppings.
