Description

These easy salmon patties are crispy on the outside, tender on the inside, and full of flavor. Perfect for a quick weeknight dinner or lunch.


Ingredients

  • 1 (14.75 oz) can salmon, drained and flaked
  • 1/2 cup breadcrumbs
  • 2 large eggs
  • 1/4 cup finely chopped onion
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)

Instructions

  1. In a large bowl, combine the flaked salmon, breadcrumbs, eggs, onion, parsley, lemon juice, garlic powder, salt, and pepper. Mix well until fully combined.
  2. Shape the mixture into 6-8 patties, depending on desired size.
  3. Heat olive oil in a large skillet over medium heat.
  4. Fry the patties in batches for about 3-4 minutes on each side, or until golden brown and heated through.
  5. Remove from skillet and drain on paper towels. Serve warm.

Notes

  • Fresh or leftover cooked salmon can be used instead of canned salmon.
  • Serve with tartar sauce, lemon wedges, or a fresh salad.
  • Patties can be frozen and reheated later.
