- 1 (14.75 oz) can salmon, drained and flaked
- 1/2 cup breadcrumbs
- 2 large eggs
- 1/4 cup finely chopped onion
- 2 tablespoons chopped fresh parsley
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for frying)
Instructions
- In a large bowl, combine the flaked salmon, breadcrumbs, eggs, onion, parsley, lemon juice, garlic powder, salt, and pepper. Mix well until fully combined.
- Shape the mixture into 6-8 patties, depending on desired size.
- Heat olive oil in a large skillet over medium heat.
- Fry the patties in batches for about 3-4 minutes on each side, or until golden brown and heated through.
- Remove from skillet and drain on paper towels. Serve warm.
Notes
- Fresh or leftover cooked salmon can be used instead of canned salmon.
- Serve with tartar sauce, lemon wedges, or a fresh salad.
- Patties can be frozen and reheated later.
