Description

A quick and flavorful dish combining juicy peaches, fresh basil, and tangy balsamic glaze over tender chicken breasts. Perfect for a summer dinner.

Ingredients

Units Scale
  • 4 boneless, skinless chicken breasts
  • 2 ripe peaches, sliced
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons olive oil
  • 1/4 cup balsamic glaze
  • Salt and pepper to taste
  • 1 tablespoon honey (optional for added sweetness)
  • 1 teaspoon garlic powder

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, and garlic powder.
  3. Heat olive oil in a skillet over medium-high heat. Sear chicken for 2-3 minutes on each side until golden brown.
  4. Transfer seared chicken to a baking dish. Top with peach slices and drizzle with balsamic glaze and honey (if using).
  5. Bake for 20-25 minutes or until chicken is cooked through.
  6. Remove from oven and sprinkle with fresh basil before serving.

Notes

  • Use fresh, ripe peaches for the best flavor.
  • Can substitute nectarines if peaches are unavailable.
  • Pairs well with rice, quinoa, or a light salad.
