Ingredients

Units Scale
  • 8 oz ramen noodles or spaghetti
  • 2 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1/2 cup soy sauce
  • 1/4 cup water
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 cup shredded carrots
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 2 green onions, sliced (for garnish)
  • 1 tbsp sesame seeds (optional)

Instructions

  1. Cook the noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat sesame oil over medium heat.
  3. Add garlic and ginger, sauté for 1-2 minutes until fragrant.
  4. Add carrots, bell peppers, and broccoli. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
  5. In a bowl, whisk together soy sauce, water, brown sugar, and rice vinegar.
  6. Pour the sauce into the pan with the vegetables and bring to a simmer.
  7. Stir in the cornstarch slurry and cook until the sauce thickens, about 2 minutes.
  8. Add the cooked noodles and toss to coat evenly with the sauce and vegetables.
  9. Cook for another 1-2 minutes until heated through.
  10. Garnish with green onions and sesame seeds before serving.

Notes

  • Use gluten-free noodles and tamari for a gluten-free version.
  • Add tofu or chicken for extra protein.
  • Adjust the sweetness or saltiness of the sauce to taste.
