- 1 cup long-grain white rice
- 2 cups vegetable or chicken broth
- 1/2 cup tomato sauce (or 1 cup diced tomatoes)
- 1/2 medium onion, finely chopped
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1/2 tsp ground cumin
- 1/2 tsp chili powder
- Salt and pepper, to taste
- 2 tbsp chopped fresh cilantro (optional, for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the rice and cook, stirring frequently, until lightly golden.
- Add chopped onion and minced garlic. Cook for 2–3 minutes until fragrant.
- Stir in the tomato sauce, broth, cumin, chili powder, salt, and pepper.
- Bring to a boil, then reduce heat to low. Cover and simmer for 15–20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork.
- Garnish with chopped fresh cilantro if desired.
Notes
- Add peas, corn, or diced carrots for extra veggies.
- Use fire-roasted tomatoes for a smoky flavor.
- Mix in a squeeze of lime juice for added brightness.
- Top with shredded cheese for extra flavor.
