  • 1 cup lemon-lime soda (e.g., Sprite or 7Up)
  • 1/3 cup vegetable oil
  • 3 large egg whites
  • 1 tablespoon lemon zest
  • 1 tablespoon lime zest
  • 1/2 cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon lime juice
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, combine white cake mix, lemon-lime soda, vegetable oil, egg whites, lemon zest, and lime zest. Beat until smooth.
  3. Divide batter evenly among cupcake liners, filling each about 2/3 full.
  4. Bake for 18–20 minutes or until a toothpick inserted in the center comes out clean.
  5. Let cupcakes cool completely on a wire rack.
  6. Meanwhile, prepare the frosting by beating butter until creamy. Gradually add powdered sugar, lemon juice, lime juice, vanilla extract, and a pinch of salt. Beat until fluffy.
  7. Frost cooled cupcakes with the citrus buttercream and garnish with extra zest or a lime/lemon slice if desired.
