- 1 large egg, at room temperature
- 1 tablespoon lemon juice (or white vinegar)
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1 cup avocado oil
Instructions
- Place the egg, lemon juice, Dijon mustard, and salt in the bottom of a jar or tall cup if using an immersion blender.
- Pour the avocado oil on top, allowing it to settle for a moment.
- Insert the immersion blender all the way to the bottom of the jar and start blending without moving it for about 15-20 seconds.
- Once the bottom turns white and creamy, slowly lift the blender up while continuing to blend to incorporate the oil.
- Blend until fully emulsified and thickened, about 30 seconds total.
- Taste and adjust seasoning if needed. Store in the fridge for up to one week.
