- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter, chilled and diced
- 6–8 tablespoons ice water
- 6 cups thinly sliced, peeled apples (about 6 medium apples)
- 3/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon butter, diced
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until dough forms a ball. Divide dough in half, shape into disks, wrap in plastic, and refrigerate for at least 1 hour.
- Preheat oven to 425°F (220°C).
- In a large bowl, toss apples with sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice.
- Roll out one disk of dough on a lightly floured surface to fit a 9-inch pie plate. Place the crust in the pie plate.
- Fill with apple mixture and dot with diced butter.
- Roll out the second dough disk and place over the filling. Trim and crimp edges to seal. Cut slits in the top crust for steam to escape. Brush with beaten egg.
- Bake in preheated oven for 45-50 minutes, or until crust is golden brown and filling is bubbly. If edges brown too quickly, cover them with foil.
- Cool on a wire rack before serving.
