Ingredients

  • 1 whole turkey (10 to 12 pounds)
  • Kosher salt
  • Freshly ground black pepper
  • Unsalted butter or olive oil
  • 1 yellow onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, crushed
  • Fresh herbs (such as thyme, rosemary, and sage)
  • 2 cups chicken or turkey broth
  • 3 tablespoons all-purpose flour

Instructions

  1. Preheat oven to 450°F (232°C) and position a rack in the lower third of the oven.
  2. Remove the giblets and pat the turkey dry. Tuck wings under and tie the legs together with kitchen twine.
  3. Rub the turkey with butter or oil and season generously with salt and pepper, including inside the cavity.
  4. Place chopped onion, carrots, celery, garlic, and herbs in the bottom of a roasting pan.
  5. Set a roasting rack or V-rack over the vegetables and place the turkey on the rack, breast side up.
  6. Roast for 1 hour 30 to 1 hour 45 minutes, or until the thickest part of the thigh reaches 165°F (74°C). Tent with foil if browning too quickly.
  7. Transfer turkey to a cutting board and let rest for 20–30 minutes before carving.
  8. Strain the pan drippings and skim off excess fat. In a saucepan, make a roux with butter and flour.
  9. Whisk in drippings and broth gradually to make a smooth gravy. Simmer until thickened and season with salt and pepper to taste.
